He enjoys combining exciting flavors, unique ingredients, and versatile techniques from all over the world to create his version of New American Cuisine. Chef Greg Mason values fresh ingredients, working with local farmers, and small businesses to provide the highest quality product for customers. He and his staff believe that creating well designed scratch cuisine with heart and soul will result in a delicious high-quality product that will keep customers coming back for more. In 2019 he became a certified Primal Health coach and now runs his own business called The Symbiotic Chef where he offers meal prep and private dinners for clients specializing in keto and gluten free options. General Manager - Juan Lowman Juan has over 20 years of experience in the hospitality industry - starting as a busser at a fine dining establishment, where he served and bartended for 13 years. From there, Juan also served and bartended for another 5 years at a high-volume bar atmosphere, working his way through various restaurant roles, up to his current role as the General Manager at the Tavern. He has extensive experience in a wide range of dining spaces, from fine dining, to a more casual sports bar environment. He has held just about every position in the restaurant business - making him an exceptional leader, as well as attentively aware of all of the intricate workings of a fast-paced dining atmosphere like White Oak. He has been nominated for Howard County’s best bartender for 3 consecutive years, alongside The White Oak Tavern for a multitude of categories. The Tavern is lucky to have such a seasoned, knowledgeable, accomplished professional to oversee the day-to-day operations of the restaurant, to ensure you have a wonderful dining experience with us. Bar Manager - Sam Waller Sam has been working at the Tavern off and on since its opening day in 2014. During the White Oak’s early years, Sam was the lead bartender and played a major role in creating a farm-to-table beverage program, borrowing the same sustainable concepts as our talented kitchen staff. He worked closely with the chef on many collaborative dinners and events and picked up two consecutive “Best Bartender in Howard County” awards (2017, 2018). Today, Sam runs the entire beverage program, continuing to write seasonal cocktail menus, purchase beer, wine, and liquor, and supervise a growing staff of up-and-coming bartenders. Sam likes cats, loud music, and whiskey.
It's been an honor to have been nominated and won several categories in Howard County Magazines' Best Of since our first year of opening. With our staff's determination and dedication we have crawled our way to the top and beaten the odds against us. Without a community to serve though, none of this would have been possible.
